WHY UP↑SCALE › FOR WHOM? › BAKERIES & PASTRY SHOPS

The scale for bakeries and pastry shops

Every dough the same, every batch at the right size, every label with the right allergens - and you know what a loaf costs you. UP↑SCALE turns your scales into a recipe station that thinks like a baker.

What helps you most

1Recipes weighed step by step, at any batch size

Save your recipes on the scale (250 with PRO) and say how much you want to make - 40 rolls, 12 kg dough. The scale asks for one ingredient after the other with the right amount: weigh it in, it turns green, next. Times in your instructions become timers ("knead for 8 minutes"). Only 2 kg butter left? The recipe shows the biggest batch you can make. Every apprentice gets the same dough as the master.

2Flour on the floor scale, yeast and salt on the fine scale

One recipe, two (or more) scales: the app guides every ingredient to the scale that fits it - the kilos of flour to the platform scale, the grams of yeast, salt and improver to the fine scale - and logs them together. No more salt weighed on a 5 g step.

3Baker's percentage, true hydration and dough temperature

Your recipes in baker's percentage of the total flour - also the flour in your levain, poolish or biga. Give your liquids and preferments a hydration, and the recipe shows the total flour, the total liquids and the true hydration of the dough. The DDT calculator gives you the water temperature for the dough temperature you want, in °C or °F.

4The sourdough starter, fed on time

The starter feeding helper weighs what is left of your starter, calculates the 1:x:x feed and starts a timer to its peak. The starter journal keeps every feed with ratio, peak time and temperature, and counts down to the next one.

5What a loaf costs you - and what you earn

Give your ingredients their purchase price, add packaging and labour per batch, and the recipe shows the costs per batch and per piece and your margin at your selling price. An ingredient without a price is named in red, so the costs are never quietly too low.

6Labels with allergens and the nutrition table

The recipe makes the label: the ingredients, biggest amount first, with the allergens in capitals ("WHEAT flour", "Butter (MILK)"), the EU nutrition table per 100 g and per piece - optionally minus the water lost while baking - the net weight, the lot and the best-before date. The batch report keeps the lots of your ingredients for your records.

7Every piece the same weight

Dividing dough by hand? The check-weighing shows every piece as PERFECT / TOO LESS / TOO MUCH, and the statistics tell you how even you work. Filling pralines or cake molds: the factory mode guides you cavity by cavity.

Tips from the practice

  • Name your THINGS like the ingredients of your recipes: then prices, hydration, nutrition and allergens are found by themselves.
  • Import your recipes from websites with one click - and save your own version.
  • The tablet stays on while a recipe runs - flour on the screen is fine, it is a tablet ;-)
  • Daily check: the routine check before use fits your HACCP plan.

The rules you should know

  • Food labels: EU regulation 1169/2011 (LMIV) - the 14 allergens highlighted, the nutrition declaration for prepacked food
  • Prepacked goods by weight (℮, FPackV) and sales by weight need a verified scale - see food producers & packers
  • HACCP: the check of your measuring equipment belongs into your own plan

You are responsible for your labels: the values are only as good as the values of your ingredients. No legal advice.
